Super Peng Deep Fried Calamari with Lemon Mayonnaise
cut up into roughly 1cm rings
vegetable oil for frying
salt and pepper

all purpose flour
sieved into a bowl
cut into quarters
Whack your panko breadcrumbs into a food processor and whizz until fine
Seasons your flour with salt and pepper
First take your squid and coat in flour, shaking off any excess flour before..
Plopping it into the beaten egg, again, shaking off any excess egg.
Now coat your squid in the breadcrumbs, making sure they’re fully involved with all the panko badness.
Slowly lower your squid into your hot oil and deep fry for 3-4 minutes or until golden.
Using a slotted spoon, remove from the squid from the oil and place on a plate with kitchen paper on it so it can drain of any excess oil
Salt-Bae some salt onto your calamari. Add some pepper too.
Mix your mayonnaise with the juice of half a lemon. Whack the rest of the lemon juice over your calamari.
